Also on the cards is setting up an ice-cream parlour in Connaught Place. Chawla owns Taste of China, the two Banana Leaf outlets (one in Delhi, the other in Gurgaon) and the pub, Blues.
Regarding his expansion plans, the restaurateur is keeping his cards close to his chest, unwilling to divulge details.
However at his planned Gurgaon restaurant on the third floor of the MGF Mall, he has decided to go over the top on the decor.
The restaurant will have elaborate fountains, south Indian deities as part of the faux sandalwood finish decor and a very clean kitchen.
Chawla took a Rs 30-lakh loan from his father to set up Taste of China in 1997. Business was good, and within two years, Chawla was able to pay back his father. Blues opened in 1999, as the common man's pub.
"Pubbing in those days, was restricted only to the five stars which not many could afford," he says.
Blues started rocking from day one, and broke even in 2001. He went on to open Banana Leaf, a vegetarian restaurant, the same year.
As of today each of his restaurants does business ranging from Rs 15,000 to Rs 50,000 daily. "I pay the highest tax in the restaurant business," he proudly proclaims.
"It is not difficult to make money without underquoting revenues, which is a practice nowadays," he adds.
Chawla believes that the Rs 50-lakh investment in his three new projects would substantially add to the Rs 1 crore turnover that his restaurants and pub did last year.
