Kolkatans will savour hundreds year old royal cuisine, extinct since the eclipse of the babu culture during British regime, in this puja as visiting 'bonedi barir pujo' (traditional household) turns the flavour of the season.
"We have brought from the closet items like Maharani Dal, a must at zamindari households and East India Company babus with the original recipes and love to serve this on platter as revelers flock to our place in between rounds to Shovabazar rajbari and the Sabarno Choudhury pujas," a spokesman of the cuisine initiative said.
"Also now eclipsed fusion food items like the Italian influenced Fish Florentine, which the English educated gentry had brought to vogue in the 19th century, will be introduced for the aficionado,"the spokesman from Square 405 said.
